Syrniki - Ukrainian sweet pancakes

My first acquaintance with these chubby sweet pancakes, but definitely not the last. They seem to be popular especially in Eastern Europe and when I tasted them I understood why. The texture is thick, due to the cottage cheese in the batter and this combination of mine with blood-oranges and sour cream was spot on. Not too sweet. We enjoyed them for dessert, but they would sit as well on your brunch table.

Ingredients for about 18 -20 pancakes:

2 cups/1lb/5 dl cottage cheese or ricotta
3/4 cups/1,8 dl all-purpose flour, plus extra for dusting
2 eggs
1/4 cup/0,6 dl granulated sugar (I used a little less)
1 teaspoon vanilla extract
1/2 teaspoon salt
vegetable oil for frying

Topping suggestions: sour cream, fruit, jam, honey, powdered sugar



Preparation:

1. In a large bowl, combine the cheese, 3/4 cup flour, eggs, sugar, vanilla and salt. Beat with an electric mixer until uniform in consistency, about 2 minutes. There will still be some cheese clumps and the mixture will be very sticky.

2. Place a large skillet over medium heat and add 3-4 tablespoons of oil.

3. Meanwhile, make the patties: dust a clean work surface liberally with flour. Using a spoon, scoop batter from the bowl onto the floured surface in heaping tablespoons. Using a fork and well-floured hands, roll each patty in the flour, then pat with your palm to form into a patty.

4. Once the oil is hot, place the patties into the skillet. Cook 3-4 minutes per side, flipping once during cooking, until golden brown.

5. Serve topped with some combination of fruit, jam, sour cream, powdered sugar and/or honey.









Doftande äppeldessert med timjan

I dag firas den nationella finländska matens dag, så dagen till ära publicerar jag ett smarrigt och hälsosamt recept på en äppeldessert med den egna gårdens äpplen och timjan. De här röda äpplena är mina favoriter, lämpligt sötsura så de lämpar sig både för matlagning och att äta som sådana. 

Först måste jag i varje fall ge er receptet på ett alldeles underbart äppelmos, eller äppelsmör/apple butter, som det också kallas. Klyfta äpplen med skal, bred ut på en ugnsplåt på bakplåtspapper, in i 150 grader varm ugn i ca 30 minuter, mixa i blender eller matberedare till önskad konsistens, lägg i små burkar eller påsar och djupfrys för att ha till hands när vintergröten behöver piffas upp. Inget socker, bara äpplen! Gudomligt!

Så nu vet du vad du ska göra med fallfrukten!





Äppeldessert:

lämplig mängd äpplen i ganska tunna klyftor

kanel, nejlika, ingefära i önskad mängd (jag tog 2 msk kanel, 1 msk nejlika, 2 msk ingefära)

1-2 msk mortlade korianderfrön

färsk timjan enligt smak och tycke

socker/honung/lönnsirap (jag använde karpsocker denna gång)

lite vaniljpulver

en handfull hackade blandade nötter (pricken på i:et)

flytande Flora Culinesse för formen och att ringla på





1. Smörj en ugnsform med lite Culinesse/olja.
2. Klyfta äpplena och lägg dem i formen.
3. Strö över alla kryddorna du vill använda + timjan, socker och nötter och ringla över lite Culinesse.
4. Ställ in i 200 grader varm ugn i ca 20-30 minuter.
5. Servera lite avsvalnad/kall med yoghurt/vispgrädde/glass/mascarpone och ringla eventuellt lite honung över.

Kladdkaka med turkisk peppar och hallongrädde

För mig, som älskar salmiak, är det här en suverän avslutning på middagen. Jag följde ett recept från "Jennys matblogg", men minskade lite på sockermängden. I mitt tycke kunde också salmiaksmaken ha fått vara mera framträdande, så om du gillar salmiak kan du ha i en större mängd än receptet rekommenderar. I den vispade grädden tillsätts önskad mängd lättmosade färska hallon. Om du inte visste det så är salmiak, choklad och hallongrädde en oemotståndlig smakupplevelse! I mitt tycke alltså.

Om du inte gillar salmiak men känner för att göra en underbar glutenfri fransk kladdkaka så är det här receptet kanske något för dig

Landebistro: Kladdkaka à la Varennes - mjölfri chokladbomb (forreliini.blogspot.com)


Ingredienser till kladdkakan:

en 22-24 cm kakform med löstagbart botten

4 ägg

4 dl strösocker (jag tyckte det räckte med 3 dl)

1 tsk vaniljsocker

5 msk kakao (jag tog ca 6 msk)

2 dl vetemjöl

150 g smält smör

lite flingsalt

10-15 stycken turkisk peppar karameller Fazer (jag använde 15 men nästa gång ökar jag mängden till 20)




1. Värm ugnen till 175 grader. Smält smöret och låt svalna något.

2. Rör ihop ägg och socker, blanda de torra ingredienserna och rör ner i smeten. Rör sist ner smöret.

OBS! Man vispar inte kladdkakesmet då det kan bli för mycket luft i den, vilket gör den torr.

3. Hamra/mortla turkiska pepparkaramellerna till lagom stora strösselbitar och vänd ner i smeten.

4. Smöra och bröa en rund form med avtagbara kanter. Fördela smeten i formen. Ställ in i ugnen i ca 25-30 minuter. (Min kaka stod inne knappt 25 minuter och blev lite för torr. 15-20 minuter räcker gott och väl för den ska ju vara lite lös och kladdig.)

5. Ta ut den ur ugnen och ställ svalt i minst 4 timmar eller gärna över natten.


Hallongrädde:

Blanda lättvispad grädde, lite vaniljsocker och lätt mosade färska hallon.





Höstpäronmums

En del av päronskörden gick åt till den här desserten, som jag serverade på skördelunchen för en tid sedan. Jag kokade en lag bestående av rivna rödbetor, apelsin, stjärnanis, lime, socker och svartpepparkorn. Följande dag silade jag lagen och kokade päronen i den. Färgen på päronen kontrasterar fint mot vaniljglass/vispad grädde/mascarponegrädde. Om du vill ha lite crunch, så serverar du exempelvis havreflarn till. Päronen håller rätt så länge i kylskåpet och går också bra att djupfrysa. Lämna dem då lite hårda, så blir de inte mosiga vid upptiningen.

Till lagen för 1 kg päron behöver du:

4 färska rödbetor
1 liter vatten
4,5 dl socker
2 stjärnanis
1 skivad apelsin
1 skivad lime
4 svartpepparkorn


1. Skala och riv rödbetorna. Koka upp vatten, strösocker och riven rödbeta i en kastrull. Sätt till de övriga ingredienserna och låt koka ca 5 minuter. Låt stå över natten.

2. Sila lagen följande dag. Skala päronen (avlägsna också kärnhuset om du så önskar) och lägg dem i en kastrull med lagen. Sjud sedan päronen försiktigt utan lock tills de är mjuka. Beroende på storlek och sort tar det 20-30 minuter.

3. Du kan låta dem stå kvar i lagen på ett svalt ställe tills det är dags att servera dem. Lagen kan kokas ihop/reduceras och hällas över päronen vid serveringen.












Tarte aux abricots - Fransk aprikospaj

Om du som jag inte gillar alltför sötsliskiga pajer, tror jag du blir upp över öronen förtjust i den här lättgjorda och underbart goda franska pajen. Aprikoserna får en ljuvlig syltaktig smak i ugnen.
Pajreceptet hittade jag på en fransk matsajt och det är lite annorlunda än de svenska recepten. I stället för strösocker används florsocker och lite mandelmjöl i fyllningen. Snabb att fixa till om du har färdig deg i frysen ... vilket det alltid lönar sig att ha. Försök få tag på riktigt söta och mogna aprikoser (jag brukar ha dem i rumsvärme i några dagar) så blir resultatet gudomligt ... och du kan minska på sockermängden. Jag minskade faktiskt i misstag på sockret denna gång, hade inte glasögonen inom räckhåll. Men pajen var ändå alldeles tillräckligt söt för vår smak. Aprikospajen bör serveras kall och den är godast när den stått i kylskåpet några timmar eller över natten.





Ingredienser till en paj:

1 paket färdig smördeg/mördeg

ca 600 g riktigt mogna aprikoser
2 ägg
2 dl crème fraîche
150 g florsocker (jag använde 100 g)
1-2 tsk vaniljextrakt
5 msk mandelmjöl




1. Värm ugnen till 210 grader. Smörj en pajform med diametern 22 cm.

2. Tryck ut den tinade degen i formen och på kanterna. Halvera aprikoserna, avlägsna stenarna och placera halvorna tätt på degen. Den skurna ytan bör vara uppåt för bästa resultat. Förgrädda i ugnen i 10 minuter.

3. Under tiden: blanda äggen med florsockret, vaniljen, mandelmjölet och crème fraîchen.

4. Ta ut formen ur ugnen och häll äggblandningen över aprikoserna. Grädda i ca 20 minuter.

5. Låt pajen vila 5 minuter i den avstängda ugnen. Låt den kallna ordentligt och placera den i kylskåpet till nästa dag. Då får du njuta av en saftig och härlig paj!

German apple pancakes

A while ago I read the New York Times bestseller "Save me the plums", a gourmet memoir by Ruth Reichl. She was editor in chief of the American Gourmet magazine for ten years. Previously she was the restaurant critic for The New York Times and served as the food editor and restaurant critic for the Los Angeles Times.
There are a few of her favorite recipes included in this book. This pancake recipe comes from the restaurant Lüchow's in New York. It was located at 110 East 14th Street in East Village and was famous for its huge portions of classic German food. Ruth went there once a week with her family all through her childhood. Her mother always ordered this pancake, nothing else. Only many years later, overcome with a desire for the taste of her childhood, Ruth decided to try making the dish herself. The pancakes consist of apples, eggs, lemon and sugar ... so go ahead and make some for dessert or brunch. They are the yummiest pancakes I've ever tasted , not to mention the lovely smell lingering around the house!

Ingredients for 4 large pancakes:

2 tart cooking apples (Granny Smiths are good)
1 lemon
4 tablespoons (unsalted) butter
0,5 dl brown sugar
1/2 teaspoon cinnamon (I used at least 1 teaspoon)
small grating of nutmeg (left out)
3 eggs
1,5 - 1,8 dl flour
pinch of salt
1 tablespoon sugar
2,2 -2,4 dl milk
sugar for sprinkling
rum or cognac (optional, if you want to flame your pancakes




1. Peel the apples, core them and slice them thinly. Shower them with about 2 tablespoons of lemon juice.

2. Melt half the butter (2 tablespoons) in a medium skillet and stir in the brown sugar, cinnamon and nutmeg. Add the apple slices and cook over medium-high heat for about 8 minutes, until they've become quite darkly caramelized and smell impossibly delicious. Remove them from the heat.




3. Meanwhile, beat the eggs. Gently whisk in the flour, salt and sugar. Add the milk. The batter should be thin.

4. Melt a couple of teaspoons of butter in a skillet (20 cm in diameter). When it's hot, pour in a little batter, tilting the pan so that it covers the entire surface, making a thin crêpe. Cook just until set, about 2 minutes.




5. Evenly distribute a fourth of the apples over the crêpe, pour a little batter over the apples. Turn the pancake (use two pancake turners and do it quickly) and allow the bottom to brown. Turn out onto a large plate, sprinkle with sugar, and roll the pancake up like a roll. sprinkle with a bit more sugar and if you like a splash of lemon juice.




6. Repeat this until you have four plump rolled pancakes. If you want to flame your creations, lightly warm a few tablespoons of rum or cognac for each pancake in a pan, add the pancakes, spoon the liquor over the top and set the pancakes on fire.






Rabarberkaka i långpanna

Kaneldoftande rabarberkaka med smuldeg är vad jag använde mina sista djupfrysta rabarberpåsar till. Dessutom lade jag till lite djupfrysta hallon för färgens skull. Och som alltid när jag tar på mig bagarmössan får det inte vara för invecklat. Och denna kaka, vars deg görs i matberedaren uppfyller alla mina krav: supersnabb, superenkel och supersmarrig! Receptet kommer från Allt om Mat.

Ingredienser till en långpanna:

200 g rabarber
(+lite hallon)
1 msk strösocker & 1 msk kanel
250 g smör
3 dl strösocker (jag minskade mängden till 2,5 dl)
8 dl vetemjöl (jag tog lite mindre)
2 tsk bakpulver (glömde bort, men det störde inte nämnvärt)
2 tsk vaniljsocker
3 ägg
1,5 dl mjölk
1 dl naturell yoghurt

1. Sätt ugnen på 175 grader och klä en plåt (30 x 40 cm) med bakplåtspapper. Hacka rabarbern och blanda med 1 msk strösocker och 1 msk kanel. Ställ åt sidan.

2. Smält smöret och låt det svalna. Blanda strösocker, vetemjöl, bakpulver och vaniljsocker i en matberedare. Tillsätt smöret och blanda ihop till en smuldeg. Tag ur 3 dl smuldeg och ställ åt sidan - detta ska smulas över kakan.

3. Tillsätt ägg, mjölk och yoghurt i matberedaren. Arbeta snabbt ihop till en klumpfri smet. Bred ut smeten i långpannan. Fördela rabarbern jämnt över kakan och strö sedan smuldegen (3 dl som lades undan) över.

4. Grädda kakan i nedre delen av ugnen i 20-30 minuter. Låt kakan svalna och skär den sedan i rutor eller trianglar.

Hoppas kakan smakar med en kopp kaffe/te eller till efterrätt!










Jag serverade kakan med vaniljvisp, dekorerat med blomsterströssel från ADD:WISE och några ätbara violer och mynta.




Citrus upside down cake (V, G)

I'm far from a keen baker, but nonetheless these past weeks have unveiled a hidden urge to bake. Baking and preparing food are delightful lifelines, worth making use of, when you are confined in your home. Furthermore you can brighten up your neighbours' day by sharing your products with them. 
This sunny cake found its way to my heart instantly - the recipe comes from Crowded Kitchen
As the blood oranges were in season I used a few of those and then ordinary oranges and a few clementines. You can even use lemons if you want. This lovely upside down cake doesn't contain any butter nor eggs so it's completely vegan. It's also gluten free: the flours used are oat and almond flours and gluten free all-purpose flour. The cake is spongy, moist, flavourful and refreshing. And very easy to make: start by arranging some citrus slices on the bottom of a cake pan and then pour in the batter. 

Ingredients:
2-3 blood oranges/any other citrus, peel removed and sliced into rounds
1 dl extra virgin olive oil
1 dl non dairy milk (I used oat, almond is nice, too)
1 dl unsweetened apple sauce
1 tbsp fresh orange zest
1 dl freshly squeezed orange juice/store-bought with some pulp
1/2 dl maple syrup
1 1/2 tbsp of Cointreau/other orange-flavoured liqueur
1 tbsp vanilla extract
about 2 dl cane sugar (if you like it sweet, use more)
about 4 dl gluten free all-purpose flour
1,2 dl oat flour
1 dl almond flour
1 1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

1. Preheat the oven to 175 degrees C/350 degrees F. Oil the sides and the bottom of a cake pan and line bottom with parchment paper.

2. Use a sharp knife to remove the peel and outer pith from the oranges. Then, slice into 1 cm rounds and pat each side dry with a paper towel. Remove any seeds. Let sit on dry paper towels while you prepare the cake batter, to remove as much moisture as possible.

3. In a large mixing bowl, whisk together olive oil, almond milk, apple sauce, orange juice and zest, maple syrup, vanilla and orange liqueur. Add sugar and whisk well.

4. In a smaller bowl, combine all-purpose flour, almond flour, oat flour, baking powder, baking soda, cinnamon and salt.

5. Using an electric hand mixer/stand mixer, slowly add dry ingredients to wet ingredients, mixing on a low speed, until the batter is smooth.

6. Arrange the orange slices on the bottom of the cake pan, filling in with citrus odds and ends.

7. Pour batter into pan and bake for 45 minutes. After 45 minutes, cover the cake with aluminium foil and bake for an additional 15-20 minutes. Use a toothpick or small knife to determine if it's done. If it comes out clean, it's ready.

8. Remove cake from oven and let it cool in pan for 30-40 minutes. Then place a cooling rack over the top of the pan and carefully flip onto cooling rack. Carefully remove parchment paper and let the cake cool completely before slicing.
















For decoration I used Flower sprinkle confetti from ADD:WISE.



Chocolate avocado pudding

My son brought me a much appreciated souvenir from Bali, namely a vegan cookbook. It contains 150 recipes from 60 restaurants with beautiful photos and clear directions for the recipes. This chocolate avocado pudding recipe is the only one I've made so far, and it's also one of the easiest in the book. You only need 5 ingredients and a blender to make this quick and creamy dessert. A winner in all aspects.

Ingredients for 4 servings:

300 g avocado
50 g dates
40 g cocoa powder 
40 ml espresso
100 ml water
45 ml maple syrup (or less)

Blend all ingredients together. Garnish with slices of fruit such as mango, pineapple, strawberries, raspberries, black grapes etc.

Jamie's splendid beetroot cake

A post in English for a change … simply because today I'm too lazy and too busy to start writing this post in both Swedish and Finnish as I normally do. And the temptation is too big as I have the English recipe right in front of my eyes.
All of Jamie's recipes that I have come upon are easy to make and the result is usually to my liking. Furthermore they often consist of few ingredients and are not very time-consuming. As I was looking for a nice recipe for a beetroot-chocolate cake I stumbled upon this one … it lacks the chocolate but so what … fewer calories, which is ok. Jamie didn't use any icing on his cake but he served a boozy vanilla crème fraîche with it instead. The original recipe can be found here.
I made a delicious icing with goat's cheese, Philadelphia cheese, butter and icing sugar. As you can see this frosting plus some honey-coated nuts and Blomsterströssel from ADD:WISE made the cake look gorgeous. But when it comes to tasting it there is, however, one tiny problem: you simply can't stop eating because this cake is not overly sweet and so fantastically moist and lovely that you want to feel this sumptuous taste in your mouth forever. And this statement comes from somebody who doesn't indulge in cake-eating very often!


Ingredients for Jamie's "surprise pudding":

500 g raw beetroots, preferably organic, scrubbed clean (I used my last ones from the autumn harvest)
2 thumb-sized pieces fresh ginger, finely chopped
3 large free-range eggs, separated
150 ml honey
170 ml olive oil
1 vanilla pod, seeds (I used some vanilla bean extract instead)
2 heaped teaspoons baking powder
100 g polenta
1 orange, zest and juice
1 good pinch salt
1 good pinch allspice
1 good pinch cinnamon
150 g plain flour (I used half spelt/dinkel wheat and half plain wheat)

1. Preheat the oven to 180 degrees C/350 degrees F. Peel your beetroots and coarsely grate them into a bowl. (I used my Kenwood assistant for this). Add the ginger, egg yolks, honey and olive oil in a bowl and add the seeds from the vanilla pod. Whisk together, then add the baking powder, polenta, orange zest and juice, salt, allspice, cinnamon and flour. In a separate bowl beat the egg whites until stiff  and fold them into the beetroot mixture.

2. Get yourself a 25 cm cake tin or cheesecake mould. Rub with butter and dust with a little flour to stop the cake sticking. You could also line it with greaseproof paper to be on the safe side. Pour in the mixture, then bake in the preheated oven for around 35 minutes until spongy. Test whether it's ready by poking a cocktail stick into it - if it's clean when it comes out you know the cake is done. Allow to cool.







 Icing:
125 g goat's cheese/chèvre, without the crust
200 ml icing sugar
50 g soft butter
175 g Philadelphia cheese

Whisk the soft butter and the goat's cheese with an electric mixer until fluffy. Add the icing sugar little by little and whisk until everything is well mixed and fluffy. Add the Philadelphia cheese and whisk until everything is well combined and fluffy. Spread the icing, with the help of a spatula, on top of the cake.





Honey-coated nuts:
150 ml nuts (I used hazel-, wal- and cashewnuts)
2 tablespoons honey

Roast your nuts in a dry pan. When they start turning golden brown pour some honey over them and shake the pan. Pour the nuts onto a baking paper and let them cool.
Add the nuts on top of the icing for a lovely sweet crunch. By no means don't leave them out!

I also added some scented flower sprinkle from ADD:WISE (lavender, cornflower, heather).
