Zucchini cheddar quick bread



In this tasty bread, baking soda and baking powder are used instead of yeast, which makes the bread really easy to make because everything is mixed in one bowl and you don't need to wait for the batter to rise. The flavour is amazingly rich and savoury, partly due to the grated cheese. Slice the bread and serve with pesto and parma ham as appetizers or as a perfect summer lunch accompanied by a tomato or green salad.

Ingredients:

1 1/2 cups (1 cup = 2,4 dl) zucchini, grated

2 cups all purpose white flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt (I used one teaspoon at least)

1 cup milk (non fat, whole or something in between)

1 tablespoon vinegar, white or apple cider

1 egg

3 tablespoons butter, melted

1 1/2 cups grated sharp cheddar (or other cheese you have lying around)

2 green onions, chopped



1. Preheat the oven to 175 degrees C/350 degrees F and spray a bread pan with non stick spray.

2. Wrap grated zucchini in a towel and squeeze until some of the liquid releases. (I used my hands for this.) You don't need to completely dry it out. Just a tablespoon of liquid or so.

3. In a large bowl, combine flour, baking powder, baking soda and salt.

4. In a small bowl, combine milk and vinegar. The milk will curdle a bit (you just made buttermilk)! Of course you can use storebought buttermilk instead. Mix in melted butter and egg.

5. Add milk mixture to dry mixture being careful not to over mix. (Over mixing will stop the rising of the bread.)

6. Add grated zucchini, cheese and onions. Mix lightly until just combined.

7. Pour batter into the prepared pan and bake for one hour.

8. If the inserted toothpick comes out clean, the bread is done. Cool for 10 minutes in the pan. Remove carefully and let it cool properly (preferably until the next day).
